For a staple ingredient used in so many recipes and a power food consumed by half ‎the population at least, we take rice for granted. When you have a large batch of ‎leftover rice, take inspiration in the following recipes to create delicious meals in no ‎time.‎‎

Savory rice

Savory rice tastes delicious especially when you add delicious vegetables such as ‎corn, peas and mushrooms. If you previously cooked the rice in a pressure cooker ‎and still have leftovers, sauté them with extra vegetables in a non-stick character ‎induction pan and serve them next to grilled chicken.‎

Fried rice balls

Combine 3 cups of leftover rice with ½ a cup of mozzarella cheese, ½ a cup of ‎parmesan cheese, 1 cup of bread crumbs and 2 eggs. Mix all of your ingredients ‎very well in the bowl and shape the mixture into equal-sized balls. Deep fry until ‎golden and serve with a side of cocktail sauce or ketchup!‎

Rice and chicken salad

Marinate one chicken breast in a mixture of olive oil, cayenne pepper, salt and ‎garlic powder. Shallow fry in a non-stick pan until crispy. Put leftover rice in a bowl, ‎add chicken, 1 cup of diced green peppers, 1 cup of cherry tomatoes, ½ a cup of ‎corn, ½ a cup of onions, ½ a cup of chopped cilantro, some olive oil, salt and black ‎pepper. Toss the whole and there you have it, a delicious and refreshing rice salad!‎
