For a staple ingredient used in so many recipes and a power food consumed by half the population at least, we take rice for granted. When you have a large batch of leftover rice, take inspiration in the following recipes to create delicious meals in no time.
Savory rice tastes delicious especially when you add delicious vegetables such as corn, peas and mushrooms. If you previously cooked the rice in a pressure cooker and still have leftovers, sauté them with extra vegetables in a non-stick character induction pan and serve them next to grilled chicken.
Combine 3 cups of leftover rice with ½ a cup of mozzarella cheese, ½ a cup of parmesan cheese, 1 cup of bread crumbs and 2 eggs. Mix all of your ingredients very well in the bowl and shape the mixture into equal-sized balls. Deep fry until golden and serve with a side of cocktail sauce or ketchup!
Marinate one chicken breast in a mixture of olive oil, cayenne pepper, salt and garlic powder. Shallow fry in a non-stick pan until crispy. Put leftover rice in a bowl, add chicken, 1 cup of diced green peppers, 1 cup of cherry tomatoes, ½ a cup of corn, ½ a cup of onions, ½ a cup of chopped cilantro, some olive oil, salt and black pepper. Toss the whole and there you have it, a delicious and refreshing rice salad!
