To prepare the marinade: in a bowl, mix the olive oil, soy sauce, garlic and honey.
Season with salt and pepper. Add chopped parsley and mix until combined.
Add chicken cubes and vegetables to the marinade. Toss until combined and refrigerate overnight.
Thread the chicken cubes and vegetables onto wooden skewers.
Preheat Optigrill + and select the manual mode.
Place the kebabs on the grill and close the lid.
Cook for 7-10 minutes until chicken chunks are well done.
